Spinach Tart
1 1-pound package and 1 10-ounce package frozen chopped spinach
2 eggs
4 ounces ricotta cheese
4 teaspoons butter
1/4 cup chopped onion
1 shallot, chopped
4 ounces feta cheese
1/4 cup light cream
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
Pepper to taste
1/4 cup freshly grated Parmesan cheese
Preheat the oven to 375 degrees.
Cook the spinach and drain well. Chop more finely if desired.
Beat together the eggs and ricotta cheese.
Melt the butter and saute the onion and shallot in it for 5 minutes.
Combine the drained spinach with the onion mixture and the feta cheese. Combine the ricotta mixture with the spinach mixture and moisten it with the cream. Season with the salt, nutmeg, and pepper.
Turn the mixture into a buttered quiche dish. Sprinkle Parmesan cheese over the top. Bake for 20 to 30 minutes until firm and puffed.
Serves 6.
Note: Press and squeeze all the excess water out of the cooked spinach to keep the dish from being soggy!

Made this Monday night for dinner Purple One, and it so rocked! It tasted almost like my mom's creamed spinach. My dorks were all over that bad boy. It went well with ham steaks, and I'm going to try it with beef steaks sometime next week.

This looks good - I was thinking that it would be like a quiche, but if it's like cream spinach, then I have to try it.

Have you ever tried ricotta salata? It has a salty but mild flavor and a texture similar to feta.
