Full Version: Reuben Casserole

If you love Reuben Sandwiches, then you will love this, plus its so easy to make.

Items needed:
- 1 can corned beef
- 2 cans sauerkraut
- thousand island dressing
- swiss cheese
- rye bread

Preheat oven to 375
Start out with your casserole dish, and add you two cans of sauerkraut (drained)
then add your can of corned beef (put it in and chunk it up a bit)
then add in the dressing and mix everything up (guesstamate the amount of dressing)
cover and stick in the oven at 375 for 45 min
then take out and set to side
take your rye bread and cut into cubes, place on top of mixture ( guesstamate amount of bread)
finally take you swiss cheese and place on top of the bread
cover casserole and place in oven for 10 - 15 more min

Wha-la Dinners ready!

A friend taught me to make a reuben last summer... it was really good.
I'm gonna try this one night.
But give me an idea on the amount of salad dressing... 1/4 cup?
And the bread? Just a general idea...

no problem, I used half a bottle of dressing, and the bread use enough to cover the bottom mixture. hope that helps you a little.

I haven't tried this as a casserole, but there was a short-lived restaurant here in town that offered a sandwich called a Reuben salad sandwich. It is made the same way I believe and it is sooooo good. Just make sure you pat the sauerkraut dry because it can make the sandwich soggy. Also, they chunk up swiss cheese and cook it with the chunks of swiss in it. It makes it soooo good. They also used pumpernickel bread, but I like rye better.
